I moved from New Orleans to Worcester as a teenager where I live in Great Brook Valley. I attended South High School and after graduation I attended Quinsigamond Community College for 3 years. I’ve been a chef for over 15 years working in fine dining restaurant establishments. I’ve always had a dream to start a business, but I was unsure of what type of business I wanted to pursue. It took some time to think about it, and I felt the time was right to start Big Belly Barbecue LLC., where we do amazing things with meat. We offer southern comfort food with a New England twist. Big Belly Barbecue specializes in seafood and barbecue, one of a kind that will blow your mind. We are currently growing in two locations Worcester & Boston. Please tell us about your current career and what you love most about what you do?
Big Belly Barbecue is my current business, and we take pride in our cooking. Every plate is made with love and from scratch. I prepare every plate as if I was making it for my mother. I also work for Gordon Ramsay at Ramsay Kitchen in Boston. I love to cook & take pride in my craft that god has blessed me with.

NOLA Cajun Kitchen – chicken pasta
Who is the most interesting person you’ve ever met?
Maverick Renee Brumfield, she is my daughter- She was born on 9-15-22 at 9:15am . I have one job this year and every year after that, to keep her alive. Fatherhood is going to be fun, and I’m excited about being her father and the journey that awaits us in life.
If you could travel anywhere in the world right now, where would it be and why?
If I could travel, I would go to Montego Bay, Jamaica.

What is one of the top three items on your Bucket List?
Get a food truck, then get a location for a restaurant and I’d love to travel to Montego Bay, Jamaica.

The Worcester Art Museum
Choosing anyone alive and a non-relative with whom would you love to have lunch? Why?
I would love to have lunch with the mayor of Worcester, Joe Petty, and tell him he is doing a wonderful job in the city.
Where do you see yourself in 5 to 10 years?
Running my own business and turning Big Belly Barbecue into a fine dining establishment in Worcester.
What is something interesting that most people don’t know about you, even your friends or family.
Something that interesting about me is that I love to read books and novels.

If a motion picture was made of your life, what actor/actress would you choose to play you?
Micheal B Jordan would be a great pick for me, because when he started acting, he played a small poor city kid from Baltimore in The Wire.

I love the smell of fresh fruit
